THE TRAVEL ROASTED CHICKEN PATTY AND VEGETABLE NOODLES ORIGIN STORY
This meal came about during a week stay in a hotel while working in Pebble Beach, CA. Being a work trip, it was more important for me to eat a clean, nutritious meal and have enough time for a solid 7-8 hours of sleep, rather than go out on the town and explore the local cuisine. To prioritize my wellness routine, I knew I needed a satisfying, paleo-friendly dinner I could make from the comfort of my hotel room.
While grocery stopping at a Trader Joe’s on my drive from Los Angeles to Pebble Beach, I was struck with inspiration. Scanning the shelves for easy-to-cook, real foods, I came across four of the five ingredients that would ultimately join forces to compose this dish: roasted chicken patties, spiralized carrots, spiralized zucchini, and chopped basil.
This travel-friendly meal was a smashing success and that’s why I’m sharing it with you. I ate this meal not once, but for four nights of my week long hotel stay without getting bored. Not only is it extremely easy to make, but it’s also packed with protein, healthy fat, and vegetables to keep your energy steady, your focus sharp, and your body feeling good, wherever your travels take you!

WHY THIS ROASTED CHICKEN PATTY AND VEGETABLE NOODLES MEAL IS PERFECT FOR TRAVEL

5 INGREDIENTS. This recipe requirements just 5 simple ingredients: roasted chicken patties, spiralized carrots, spiralized zucchini, chopped basil, and coconut oil. As a result, it’s inexpensive and requires minimal space in your car and your hotel mini fridge!
2 MEALS. Because each ingredient contains multiple portions (there are two roasted chicken patties per package and multiple servings of spiralized veggies per servings), you’ll automatically wind up with ingredients 2 separate servings!
ONE STOP SHOPPING. All of these ingredients can be purchased at Trader Joe’s. If you’re not near a Trader Joe’s, you can easily substitute with similar items. Look for high-quality, gluten-free, minimally processed, precooked meat patties like Aidell’s sausages or Applegate naturals sausages and frozen or fresh spiralized vegetables (you can steam fresh spiralized vegetables in the microwave).
6 MINUTES TO MAKE. Whether you’re busy at work or you’ve got a lot of sight-seeing to do, this meal takes about 6 minutes to cook (depending on your microwave power), so you can use your time doing more important things.
PERFECT FOR YOUR HOTEL KITCHENETTE. Everything you need to keep the ingredients fresh and make this meal – a refrigerator and microwave – can be found in most hotel rooms.
EASY TO ADJUST. As mentioned in the “One Stop Shopping” bullet point above, you can easily substitute different items. If you can’t find zucchini or carrot noodles, you can swap those out for butternut squash or sweet potato spirals. Or, for example, I recently discovered a vegan pesto at Trader Joe’s so I used that in place of the coconut oil and chopped basil and it was amazing! Also, you could also substitute with marinara sauce! Full disclosure: the Trader Joe’s Roasted Chicken Patty lists canola oil as an ingredient which is not paleo.
TIPS FOR MAKING THE BEST ROASTED CHICKEN PATTY AND VEGETABLE NOODLES MEAL
FIND A MICROWAVE SAFE BOWL. If you’re like me, you travel with an awesome food container. If you don’t travel with the kitchen sink, however, you have a couple options. Either investigate the hotel’s continental breakfast for bowls or simply ask the staff at the front desk. While you’re there, you should ask for a fork as well!
ADJUST COOKING TIME AS NEEDED. Depending on the wattage of your hotel room’s microwave, you may need to add or subtract from the suggested cooking time in the instructions below. Since you’re using precooked meat patties, nothing in this meal is unsafe if undercooked, so don’t stress about that. Heat until all ingredients are cooked to your desired eating temperature.
KEEP COOL. Make sure to store your ingredients in your hotel mini fridge before and after use to keep everything as fresh as possible.
Healthy Travel Food: Roasted Chicken Patty & Vegetable Noodles
Travel shouldn’t get in the way of eating clean. All you need is a basic hotel mini fridge and microwave to make this delicious, healthy dinner!
Ingredients
- 1 cup Trader Joe’s frozen carrot spirals
- 1/2 cup Trader Joe’s frozen zucchini spirals
- 1 tbsp Coconut Oil
- 4 cubes Chopped Basil
- 1 Roasted Chicken Patty
- Salt and pepper
Instructions
- Add spiralized carrots and spiralized zucchini to a microwave safe bowl. Heat in the microwave approximately 2 minutes or until vegetable noodles are thawed.
- If desired, pour the excess water from the bowl and/or pat vegetable noodles with a paper towel to absorb the liquid.
- Add coconut oil, chopped basil, and salt and pepper (if desired) to the vegetable noodles and toss to combine.
- Heat in the vegetable noodles in the microwave approximately 2-4 minutes or until vegetable noodles are heated to desired eating temperature (cook time will depend on your microwave power.) Remove bowl and set aside.
- Follow microwave instructions on Trader’s Joe’s Roasted Chicken Patty package.
- Once chicken patty is cooked, add to the vegetable noodles to the bowl and serve!
