5 MINUTE SUPER POWER PALEO SALAD ORIGIN STORY
This is one of two travel-friendly recipes that was conceived while living at a Pebble Beach, CA hotel for week. I was doing a TV art directing gig on a set in the middle of a golf course, which meant access to food was extremely limited. To make matters even more challenging, I was at the mercy of the production shuttle vans to leave and I figured they wouldn’t want to make a special trip to health foods store.
So I needed a paleo lunch that would not only fuel me with nutrient-dense protein, healthy fat, and veggies, but would also accommodate my limitations. I wouldn’t have access to a microwave, so I knew I needed a meal that didn’t need to be heated. Thus, salad. But not just any salad, a super power salad! This salad was so delicious and satisfying I ate it for not one, but all five work lunches that week!

WHY THE SUPER POWER PALEO SALAD IS PERFECT ON THE GO
NO COOKING REQUIRED. The only ingredient that would require cooking – the Trader Joe’s grass-fed beef – is pre-cooked and sliced, so all you have to do is decide how many slices you want to top your salad with! Other than that, the remaining ingredients are raw vegetables!
AT LEAST 2 MEALS. When you’re living out of a hotel and working long days, you don’t have time to hit the grocery store everyday. Because each ingredient contains multiple portions you’ll automatically wind up with ingredients for at least 2 separate servings! If you purchase two bags of Trader Joe’s organic power greens, you’ll have enough food for 4-5 salads!
ONE STOP SHOPPING. All of these ingredients can be purchased at Trader Joe’s. Don’t have access to a Trader Joe’s? No problem. You can easily substitute with similar items. Look for high-quality, gluten-free, minimally processed, precooked meat like Applegate Organics deli meat and comparable fresh vegetables.
5 MINUTES TO MAKE. This meal is perfect for a busy day because it takes just 5 minutes to assemble and there’s no cooking involved. That’s less time than it will take you to find and order lunch at work (especially if you’re working in the middle of a golf course like I was)!
PERFECT FOR YOUR HOTEL KITCHENETTE. If you’re traveling, the only required kitchen equipment is a hotel mini fridge to keep your food fresh.
EASY TO ADJUST. As mentioned in the “One Stop Shopping” bullet point above, you can easily substitute different items. Can’t find broccoli slaw? Add sliced cucumber. No pomegranate seeds to be found? Substitute with fresh berries.
TIPS FOR MAKING THE BEST SUPER POWER PALEO SALAD
USE A FOOD CONTAINER WITH A LID. I’d highly recommend this awesome food container for your travel food, but if that’s not your style, use a glass tupperware container or recycle an old take out container. You’re also going to need a set of utensils, specifically a knife to slice your avocado and a fork to chow down on your salad.
KEEP COOL. Make sure to store your ingredients in your hotel mini fridge before and after use to keep them as fresh as possible.
PACK YOUR DRESSING SEPARATELY. No one likes a wilted salad. Avoid that tragedy by packing your olive oil and balsamic vinegar separately. Better yet, purchase these olive oil travel packets and balsamic vinegar travel packets for minimum effort and maximum convenience!
USE TRADER JOE’S PRE-COOKED GRASS-FED BEEF. This is one of the crown jewel of this recipe’s travel appeal. Not only does this product from Trader Joe’s checks off all of the paleo quality boxes but it’s also pre-cooked and sliced meaning it’s high quality beef that’s ready to eat!
The Super Power Paleo Salad
Not only is this Super Power Paleo Salad gorgeous, but it’s the ideal balance of convenience, nutrition, and deliciousness making it the perfect work lunch – especially if you’re traveling for work!
REQUIRED EQUIPMENT: A food container. If packing for work, I recommend a glass tupperware container. If packing for travel, I recommend this durable container.
Ingredients
- 3 handfuls Trader Joe’s organic power greens (or any organic mixed greens blend)
- 1 tbsp Pomegranate seeds
- 1 handful Shredded carrots
- 1 handful Broccoli slaw
- 1/2 Avocado (sliced)
- 1/4 lb Trader Joe’s Pre-cooked grass-fed beef
- 1 tbsp Olive oil
- 1 tbsp Balsamic vinegar
Instructions
- PREPARATION: Assemble salad. Place power greens in the bottom of your food container. Place shredded carrots, broccoli slaw, sliced avocado, pomegranate seeds, and grass-fed beef slices on top of greens.
- If packing salad for lunch, cover your food container with its lid and pack it in your lunch bag. Pack olive oil and balsamic vinegar in a separate container or simply pack your individual balsamic vinegar and olive oil travel packets!
- MEAL TIME: Pour balsamic vinegar and olive oil on to salad, cover salad container securely with its lid and shake for 20 seconds or until dressing is evenly mixed throughout the salad. Enjoy immediately!
